got second set of knives back from the brink of destruction. refunded for all. ‘manager’ was in agreement about the knives that were done being done poorly, but didn’t really seem to get just how bad they were. whatever. i’ll still shop there, but absolutely NEVER take my knives there to have work done. EVER. we then went to one of the recommended places, Portland Knife House. hooooooo boy!! there’s an entire wall, maybe 30’ long, of japanese chef’s knives! AN ENTIRE WALL!!! they looked at the misery that was Zen fella’s ‘sharpening’ job, and wondered what the fuck happened. one of the guys used to work with mr zen, and was mystified. they then proceeded to shake their heads at a couple of my oldies. they’re really old. and german (i guess german knives are a bit passé). whatever, again. i love them. they hold memories. they’ve chopped off chunks of my fingers.
anyway, they didn’t make too much fun of me and my mishmash of a knife collection, told me which one is really just good for hacking carcases (which is great, as i don’t like it a whole lot, and that will give it some good use), and let me heft a whole slew of 9″ chef knives, for me to muse out loud to m that ‘this would be a nice birthday present next month…..’
